The main function of a pine cone is to keep a pine tree's seeds safe. Pine cones close their scales to protect the seeds from cold temperatures, wind and even animals that might try to eat them. Pine cones open up and release their seeds when it is warm and it is easier for the seed to germinate.
A lot of conifers have pink or red immature cones; most of the ones that do are high altitude species (and often dark purple in very high altitude species), so it probably helps in thermoregulation and ultraviolet light blocking.
The cones change from pink/red/purple to brown when they are mature and dry out to open and release the seeds. All cones (whatever color) need to be pollinated to produce seeds!
